  • Heat 1 tablespoon oil in a large skillet over medium heat. Add onions and brown sugar and cook, stirring often, until the onions are very tender and golden brown, about 15 minutes. Add broth, vinegar and 1/4 teaspoon salt and cook, stirring, until the liquid has almost evaporated, 3 to 4 minutes more. Transfer the onions to a bowl; cover to keep warm. Clean and dry the pan.

  • Sprinkle the remaining 1/4 teaspoon salt and pepper on both sides of each steak. Heat the remaining 1 tablespoon oil in the pan over medium-high heat. Add the steaks and cook until browned, 3 to 5 minutes. Turn them over and top with cheese. Reduce heat to medium-low, cover and cook until the cheese is melted and the steaks are cooked to desired doneness, 3 to 5 minutes for medium-rare. Serve the steaks with the caramelized onions.

Great recipe but inaccurate Recipe states 15 minutes to carmelize onions. Carmelizing onions unless the recipe author has some kind of magic trick takes MUCH longer. Made this tonight using fillets. I'm allergic to bleu cheese and didn't have any feta so I subbed in some crumbled goat cheese. I used a heavy bottom stainless steel skillet for cooking both onions and the steak. The onions were amazing and had just the right amount of sweetness to them. My husband doesn't normally like a lot of onion but he ate all that was on his plate. I did cheat a little with my steak. I used kosher salt and sprinkled it liberally on both sides of the steak. I got this tip from another blog about pan searing steaks. I got a beautiful crust on both sides and didn't have to add anything else to the steak. The steak had no flavor at all. I think next time I'm going to marinade my steak how I usually do it and add the onions and cheese. The onions had such great flavor and the blue cheese worked well with the steak and the onions. I just think there needs to be more flavor in the steak. Read More

I am a vegetarian but I made this for my fiancee who loved it. I did a few things different. I got the bacon wrapped fillets and took off the bacon and cut them in half through the middle. I also added more salt and pepper to the top of the fillets when cooking them so they had more flavor. I added blue cheese on the top and put a little more than the recipe called for. This went over really well with my fiancee he was literally praising it the whole time he ate it. He liked it so much he ate all of it in one sitting. Delicious and satisfying! I followed the cooking times exactly and these steaks came out just the way we like them! Slicing 2 onions seems excessive but they cook down a lot and we ended up using almost all of them. The balsamic with the sugar makes such a yummy sauce. BETTER than ANY restaurant we've ever eaten in! I also made this for my husband and I last night. I omitted the brown sugar (I just simply forgot it!). My husband couldn't believe this was healthy! I paired this with bacon mashed potatoes (also from this site)...both of us felt like we were "cheating" on our diet!
