Sturdy apples are flavored with cinnamon and vanilla in this slow-cooker apple compote. Top with low-fat vanilla ice cream and a sprinkling of toasted walnuts for dessert.

  • 3 pounds firm cooking/baking apples, such as Granny Smith, Northern Spy, Rome or Golden Delicious
  • ¼ cup sugar
  • ¼- ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

  1. Peel the apples and slice ¼ inch thick. (You should have about 9 cups.) Place the apples in a 4-quart or larger slow cooker. Add sugar and cinnamon to taste, and toss to coat well. Cover and cook until the apples are very tender and almost translucent, but not pureed, 2 to 2½ hours on high or 4 to 4½ hours on low. Stir in vanilla. Transfer to a bowl and let cool slightly. Cover and refrigerate until chilled.

I went with the reviews to my chagrin I cut the sugar per the multiple reviews and it is not sweet enough. I used the Granny Smiths called for. Follow the recipe. Pros: healthy Cons: I shoulda followed the recipe

Good and Easy We made this to spoon atop vanilla bean ice cream for dessert. Nice spice and vanilla. I skimped on sugar when measuring, but next time will probably reduce to half. There will be a next time. :-) Pros: simple, no-fuss Cons: Too sweet

Microwaved I did the same thing with less sugar + added lemon juice in the beginning ( to stop oxidation of the apples) + cinnamon > I placed in d oven for 40 odd min at 180. U can increase the time based on the look. Do not forget to cover the pot while baking. And toss the apples when they are done half way thru. Pros: faster

Not as good as i had hoped In the picture it appears to have something crunchy on top, but the recipe doesn't call for anything, Something to give it that crunch would have really helped. Also, cutting back on the sugar is a good idea, i used the full amount and it was definitely too sweet. The rome apples we used were a little too soft, make sure to buy a more firm apple. I would also cut the apples into bigger pieces, to make them easier to cook as well as eat. Smaller pieces tend to become much after cooking for so long. All in all, it wasn't a bad recipe, just use thicker slices, less sugar, and something to give it a crunch! Pros: Good alternative to apple pie Cons: No crunch as seen in the picture

Caramelized YUMMY !!! I completely forgot about my slow cooker being on high in the corner of my kitchen ... 7 hours later (ON HIGH!) ... I had a terrified look at my 3/4 shrunken apple confit ... and boy ... WAS THAT GOOD! They were almost caramelized with the chunks still whole and a deep full perfumed taste. By the way I added 1/2 tsp of ground cardamom. YUMMY. My whole family jumped on it and it was gone in one bite. Worth the work of peeling, coring and dicing the apples. Enjoy. Pros: You can forget about it and it gets even better with time!

Applesauce! I used half the sugar based on these other reviews and it was perfectly sweet, but I may want to up the cinnamon next time for a bit more punch. Otherwise, it was a really yummy applesauce (which is what it turned into the moment I stirred in the vanilla). I'm using the leftovers in pancakes this morning!

Great as ingredient for other recipes. I enjoy making a sundae out of this recipe with walnuts and Fage 0% plain yogurt. Pros: Can store cooked apples in fridge for use in other recipes. Cons: It's okay alone, but better if you add walnuts or other ingredients.

I cooked this for 4 hours and when I checked, it was nearly pureed. I also used about 3/4 of the amount of sugar and it was still more than sweet enough. A matter of taste, but more can always be added later. Next time I'll use 1/2 the amount of sugar. I liked it even though it was over cooked (my fault). Worth making again.

Love it! I put in more apples and less than 1/8 c. of sugar which is less than half of what the recipe called for and it's perfect. I did add a little more cinnamon as well. I'm looking forward to mixing it into my breakfast oatmeal tomorrow morning!
