  • ¼ cup shredded carrots
  • 2 tablespoons barbecue sauce
  • 2 teaspoons light ranch dressing
  • 1 small whole-wheat sandwich bun
  • 1 leaf romaine lettuce

  1. Combine chicken, carrots and barbecue sauce in a bowl. Spread ranch dressing on the bun. Top with the chicken mixture and lettuce.

Perfect picnic sandwich I made the chicken filling (quadrupled for 4), brought it in a dish to an outdoor concert, with brioche buns and romaine leaves packed separately; put together right before eating to avoid soggy sandwiches. Very tasty! Served with coleslaw and fruit, made a very nice picnic dinner. Pros: Easy to make, very tasty, portable Cons: Probably not health conscious

what makes this sandwich tast so good? what makes this sandwich taste good is toss leftover cooked chicken with barbecue sauce and crunchy carrots. It is the perfect meal to make for the family.....

You can't tell the difference My husband is a very picky non veggie eater and I made this sandwich he loved it; you can't taste the carrots they just add a little crunch. To make mine a little healthier I did not add the ranch, I used sandwich thins or Flax Pita, and used a good BBQ sauce without alot of sugar. This has now became a staple for our lunches.

Great Simple BBQ! Great sandwich, easy and quick for weeknight dinners. I skip the ranch addition and use Sticky Fingers BBQ sauce. If your not using the shredded carrots, coleslaw mix is great to throw in too, plus a pickle or two on top. Yum! Usually make this with the healthy onion rings. Pros: Tastes great, simple, quick

I'm dieting, so I made mine on an Arnold Wheat sandwich thin, skipped the dressing and used a low cal Ken Davis BBQ sauce. My sandwich came in at 215 Calories with 2.4 ounces of shredded chicken breast. Yummy and satisfying lunch, I'll be making it again. I heated the mixture for 45 seconds in the microwave to take the chill off.
