  • Mix chili powder, salt and ground chipotle in a small bowl. Sprinkle over both sides of pork.

  • Heat oil in a large skillet over medium-high heat. Add the pork and cook until golden, 1 to 2 minutes per side. Add cider, syrup and vinegar to the pan. Bring to a boil, scraping up any browned bits. Reduce the heat to medium and cook, turning the pork occasionally to coat, until the sauce is reduced to a thick glaze, 1 to 3 minutes. Serve the pork drizzled with the glaze.

Great quick weeknight dinner this recipe is great for many reasons. It is really fast easy and I had all of the ingredients in my pantry! The flavors are excellent- I was worried it would be too sweet but it came out really well. As other reviewers suggest I would recommend doubling the glaze (and therefore also increasing the reducing time). I served this with rice pilaf and crinkle cut carrots. New favorite of the husband! My husband LOVED the flavor of this dish and has now requested that we have it once a week. We were lucky to have very fresh chipotle and red chili pepper from New Mexico on hand from our last vacation and I also used pure maple syrup. I don't think you need to double the syrup if you go with pure maple and the flavor is worth the extra cost. We like our food spicy so I doubled the chipotle and added an extra dash of maple syrup to compensate. YUM!!!! Pros: Delicious flavor quick cook time and so easy!
