Pork medallions are quick and easy to prepare, and are particularly tasty with a maple-chili glaze.

  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ⅛ teaspoon ground chipotle pepper
  • 1 pound pork tenderloin, trimmed and cut crosswise into 1-inch-thick medallions
  • 2 teaspoons canola oil
  • ¼ cup apple cider
  • 1 tablespoon maple syrup
  • 1 teaspoon cider vinegar

  1. Mix chili powder, salt and ground chipotle in a small bowl. Sprinkle over both sides of pork.
  2. Heat oil in a large skillet over medium-high heat. Add the pork and cook until golden, 1 to 2 minutes per side. Add cider, syrup and vinegar to the pan. Bring to a boil, scraping up any browned bits. Reduce the heat to medium and cook, turning the pork occasionally to coat, until the sauce is reduced to a thick glaze, 1 to 3 minutes. Serve the pork drizzled with the glaze.

Quick and easy with great flavor This is a favorite of mine. It is easy to prepare and gives great flavor to a bland pork tenderloin. I buy tenderloin on sale, pre-slice it and freeze it, just so I can make this recipe. I wouldn't recommend substituting apple juice for the cider. It is too mild a flavor to complement the chipotle. But, when cider is not in season, I sometimes substitute orange juice with wonderful results. Pros: Easy weeknight meal Cons: Might need more glaze

Great quick weeknight dinner this recipe is great for many reasons. It is really fast, easy, and I had all of the ingredients in my pantry! The flavors are excellent- I was worried it would be too sweet but it came out really well. As other reviewers suggest, I would recommend doubling the glaze (and therefore also increasing the reducing time). I served this with rice pilaf and crinkle cut carrots. Wonderful and this recipe is now in my regular rotation! Pros: Fast, easy, few ingredients Cons: High in sugar

Amazing I've only ever made this with chicken, as my family and boyfriend are not a huge fan of pork, and when I first told them I was going to make it for dinner, they were very skeptical .. I swapped the cider for plain apple juice, and used white vinegar, and my family absolutely loved it, and now get excited every time I say I'm going to make, which is brilliant for me, because my boyfriend is so fussy with his food. Plus it's so simple, and so quick to make, it's great from when I get home from uni and can't be bothered. I've already shared this recipe with all my friends. Pros: quick, easy, tasty

I was looking for low recipes low in sodium and this one came up. Although it sounds good it is very high in sodium I don't know how that is considered heathy.

Easy Glaze! We loved the combination of spicy, savory, and sweet that this quick dish was able to deliver. It was wonderful! Served it with roasted sweet potato fries which also went well with the left over glaze on the plate!

One of our weeknight go-to recipes! We love this recipe! We make it with tenderloin medallions as well as pork chops. It's very versatile regarding side dishes and super quick to throw together on a weeknight. It's flavorful and delicious. One thing we change is we add a bit of cayenne pepper as we love spicy food.
