I was skeptical the whole time I was making this. I kept tasting along the way and it was not super (bland then too much smoked paprika then bland again) - until the very end! It ended up savory satisfying and complex. I did throw in some fresh chorizo (like others suggested) and a Parmesan rind and used canned tomatoes.
Definitely a keeper recipe! I've made this soup several times and love it more every time! The first time I made it exactly to the recipe specifications but found it just a little lacking. The tenderloin was not the right consistency for what my husband and I were hoping for so after that I started substituting ground pork (after reading other reviews about using spicy sausage I may try the spicy ground pork from our local butcher!) added two cubed zucchinis and used about half the onion and replaced it with a roughly chopped leek. Other variations: remove the pork altogether (to make it vegetarian); add lima beans and sweet corn or carrots; add mushrooms and celery... I've left the paprika out completely (by accident) and it comes out just fine as long as you replace it with some other kind of spice. Delicious! Pros: Easy and fairly inexpensive to make
Delicious with some changes... I ended up making this with boneless/skinless chicken breast because it's what I had thawed. I also substituted Swiss chard for the kale (again...what I had) and my own canned tomatoes for the Romas...you know why. I will make a couple of modifications when I make this again (and I will make it again!). First and foremost I WILL NOT use smoked paprika. In our opinion it totally overpowered any smell coming out of the pot - and it wasn't really a GOOD smell. Oddly the soup ended up tasting completely different from the aroma. If we could keep from inhaling when we opened our mouths for the spoon it was better. So no smoked paprika for us. Also I will mash about half of the beans before adding them to the soup - I think a thicker consistency will make this soup better. Additionally I agree with other comments...this soup is just ASKING for some spicy pork sausage. Pros: Easy to make Cons: None really
Substituted pork sausage in place of pork tenderloin The local market was out of all natural pork tenderloin so the butcher recommended the all natural sweet Italian pork sausage. The soup was a home run with my 15 year old who tends to be a picky eater. It was truly fabulous! I removed the pork from the casing cooked it stove top in my Dutch oven with the onions and removed excess fat (which was minimal) with paper towel proceeded with garlic and followed recipe....yum! Use enough spice and a bit of chorizo and it is lovely Made this as a dinner soup / stew using home grown kale and tomatoes and a jar of white beans (from M&S for UK readers) plus a pork tenderloin. I added a pack of pre-chopped chorizo that I had into the onion mix so it got fried with the onion and garlic. Was slightly generous with the spices - I like robust flavors - but the end result was very nice indeed. and my wife was delighted with the end result - we had the soup / stew with some nice granary bread cut thick and toasted. Leftovers were consumed by extended family - mother in law plus two sisters in law (and ourselves) the following day. Not entirely convinced it tasted any better the next day but it was certainly equally nice. Overall... a very nice recipe. Prepared with some thought as you balance spices and sugars etc. it works very well and produces a very tasty end result. Pros: Simple tasty quick
Excellent filling soup I followed the recipe the first time and thought the pork wasn't quite right. So I tried again using leftover pork roast. It was tender and perfectly matched with the beans and kale. The peppers and other flavors mask the bitterness of the kale so that everyone in the family would eat it. I will definitely make it again! Pros: Easy and quick to make Cons: Seeing green kale in the soup may be an instant turnoff for kids.
Delicous I liked this recipe a lot The warmth of the paprika and red pepper harmonizes beautifully with the bitterness of the kale. The pork needs to be cut smaller than 1 (that's a lot to fit in your mouth in one bite) and I would have liked about 50% more beans. Adding chorizo as another reviewer suggested below sounds like a good idea. Without the pork this would make a great vegetarian option. Pros: Tasty nutritious no unusual ingredients
Spanish Flair Followed the recipe exactly but added one extra ingredient...spanish chorizo. The soup came out amazing! I think without the chorizo it might have been a little bland. I think this soup would benefit from some extra simmer-time to allow the flavors to meld together. I can understand why it would be even better the next day. The whole family liked it This was good and we'll definitely be adding it to our family recipes. The only changes I made was to add an extra can of white beans and reduced the amt of pork by 1/3. I accidentally left it on low heat and it simmered for hours after we first ate it when I ate another bowl after it had simmered all afternoon it was incredible! It is delicious with the manchego cheese but doesn't need it at all. Enjoy Pros: kale is a superfood
good base recipe needed help to make it great i followed the ingredient list and instructions and got a lackluster soup with chewy pork. so we ended up having somethin else for dinner and the next day i put it in the crock on low all day with some minced jalapenos diced zuke mushrooms red bell pep baby yukons fresh thyme lemon juice cumin and a dash of apple cider vin. turned out amazing. AMAZING!! i was glad for the idea tho i've often been a little pork shy and this finished product may have started a little love affair... Pros: easy yummy healthy ingredients Cons: kinda bland as written
This soup came out very well however I did substitute the pork with chicken and used spinach instead of kale. Everything else was the same and I will definitely be making this again I'll try the pork and kale too. It was very good and very feeling. Margie Palmdale CA

I thoroughly enjoyed this soup! However upon completion of the recipe it was still a bit bland it seemed to need more acidity and 'pop'. I added a bit more wine a a squirt of lemon juice plus I doubled the amount of garlic. With the modifications it was fantastic! Lexi CA

This soup is AWESOME! I enjoy healthy food much more than my family but even I was surprised when I taste-tested this. My 14 year old son even liked it. He was peering into the pot saying 'what is that green stuff?' After I encouraged him to have a bite of my cooled soup I had to chase him down to retrieve my bowl! Fantastic soup! And a great way to get some of those dark green leafy vegs. Smoked paprika from Spain gives the soup such a sophisticated flavor. Even better the second day after the flavors have had time to permeate the meat and mellow. Chris Los Altos CA
This is a hearty nutritious and tasty soup. I substituted mustard greens for kale. Both greens need to be cooked 10 to 12 minutes to become tender. I added some leftover spaghetti squash I had frozen for just such a use. Both my husband and I liked the added color texture and nutrients the squash provided. Anonymous Clearwater FL
Yummy. I'm so pleased this is healthy! I just used regular paprika and used 6 cups of chicken broth instead of 4. Next time I would add more wine and maybe some lemon juice at the end per another reader's suggestion. I also finely chopped the tomatoes which was a nice contrast with the big chunks of pork and kale. Another yummy idea for next time would be to use garbonzo beans instead of cannelini beans.
We just finished a double recipe of this soup! 6 men eating and there was only a taste left for me! If that wasn't a knockout recipe I don't know what is! Only thing I did differently: I added a little red wine vinager maybe a tablespoon or two. Used regular paprika and I made it yesterday and served it today which enhanced the flavor I do believe! Just delicious! My 3 year old loved it... I did not have white wine so I put a bit of red wine and a bit of white wine vinegar I used vegetable broth as I did not have the chicken one and it was just prefect; Instant hit definitely a repeat;
I am a big gardener and am always looking for new ways to use kale. I loved this soup. I did add 1 tsp of kosher salt at the end as well as 1/2 a bag of frozen corn just because I thought the yellow color would look pretty. I substituted a 28 oz can of diced tomatoes for the fresh because that's what I had on hand. Very easy very pretty and very yummy. Susan VA
Tasty hearty soup Tasty soup! I switched canned tomatoes instead of fresh and garbanzo beans instead of white beans. Also added some zucchini which was good. Wasn't crazy about the kale so I may switch for some spinach instead next time. I might try adding a little lemon juice next time too at the end.
Easy flavorful & absolutely delicious! I used leftover already roasted pork tenderloin & spinach instead of Kale. I added the pork with the beans about 15 mins. before serving & was amazed at how tender the pork had become. My entire family LOVED it! I will definitely make this again. Disappointing When I went to make this soup I was extremely excited. After making it however I was disappointed. It really should be directed as a veggie soup as that's the overwhelming flavor. It needed more meat less kale more seasoning and more overall flavor. Pros: Lots of veggie flavor Cons: not meaty enough verrrry strong tomato flavor
Okay I made this for the first time the other day and followed the directions to a T. I was disappointed; I think my expectations were a little high. Don't expect more out of this recipe than what's in it. I will warn you that the crushed red pepper amount given is pretty strong. Personally I love pork but not in a watered down chicken-broth soup. I say save the pork for on the side and make a vegetable soup!
