Very finely chopping onion, mushrooms and carrots in the food processor is not only fast—it makes the vegetables hard to detect for picky eaters. They also form the base for the sauce of this ground beef skillet supper. Make it a meal: Serve with a green salad.

  • 3 cloves garlic, crushed and peeled
  • 2 medium carrots, cut into 2-inch pieces
  • 10 ounces white mushrooms, large ones cut in half
  • 1 large onion, cut into 2-inch pieces
  • 1 pound 90%-lean ground beef
  • 2 teaspoons dried thyme
  • ¾ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 2 cups water
  • 1 14-ounce can reduced-sodium beef broth, divided
  • 8 ounces whole-wheat elbow noodles, (2 cups)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • ½ cup reduced-fat sour cream
  • 1 tablespoon chopped fresh parsley, or chives for garnish

  1. Fit a food processor with the steel blade attachment. With the motor running, drop garlic through the feed tube and process until minced, then add carrots and mushrooms and process until finely chopped. Turn it off, add onion, and pulse until roughly chopped.
  2. Cook beef in a large straight-sided skillet or Dutch oven over medium-high heat, breaking it up with a wooden spoon, until no longer pink, 3 to 5 minutes. Stir in the chopped vegetables, thyme, salt and pepper and cook, stirring often, until the vegetables start to soften and the mushrooms release their juices, 5 to 7 minutes.
  3. Stir in water, 1½ cups broth, noodles and Worcestershire sauce; bring to a boil. Cover, reduce heat to medium and cook, stirring occasionally, until the pasta is tender, 8 to 10 minutes.
  4. Whisk flour with the remaining ¼ cup broth in a small bowl until smooth; stir into the hamburger mixture. Stir in the sour cream. Simmer, stirring often, until the sauce is thickened, about 2 minutes. Serve sprinkled with parsley (or chives), if desired.

Very boring and bland if you follow the recipe to a T. I used it as a guideline and put in a lot more salt, worcestershire, and even some sugar. Served the dish with shredded cheese and hot sauce. It turned out fine, delicious enough for a tired Tuesday night.

My little girl is a very picky eater and she polished two plates full of this!!! I couldn't believe it!!! I did add a little extra salt because it was a bit bland to my taste but other than that it was fabulous!! My husband loved it too

The sauce didn't really thicken up and the thyme was overbearing. I used dried powder like thyme so I only used 1/4 of what the recipe called for but it was still too much. My daughter said it was ok but my husband wouldn't eat it at all.

This was so gross I had to throw it all out. Had I known that thyme was so nasty tasting I never would have added it. No one in the family liked it.

Both my husband and I really enjoyed this , BUT with the following changes as suggested by some of the comments - Had no carrots or mushrooms, so just didn't use them. Cut onion into small pieces, didn't use processor at all. Reduced thyme to just a couple shakes. Replaced water with broth. Added a small can of tomato paste. Used plain Greek yogurt instead of sour cream. Didn't really need flour, probably because I didn't use all the water. Added a few extra spices ...paprika, garlic salt. Now with these changes...would definitely make again.

Fiance is a picky eater so this healthy hamburger helper was perfect. We added red pepper flakes to give it some spice.

This looked so good but unfortunately it was bland. I am not big on salted foods but I actually added salt to this. Perhaps I should have just used regular broth instead of low sodium. What I did like about it, was that it looked very yummy and all the vegetables in it were nicely masked so children would never know. I was very filled after eating 1 and a half servings, which was still very low in calories. All good things in the dish, but the flavor needs bumped up.

Well....it would have been good without so much thyme. I would make it again but omit the thyme.
