  • 1/3 cup reduced-fat vanilla yogurt
  • 1/2 cup crushed canned pineapple, or canned mandarin oranges
  • 1 tablespoon toasted coconut, (see Tip)

  1. Top yogurt with pineapple (or canned mandarin oranges) and coconut.
  • Tip: To toast coconut: Place coconut in a small dry skillet and cook, stirring often, until golden, about 5 minutes or spread in a shallow baking dish and bake at 350°F until light golden and fragrant, 5 to 10 minutes.

Do Not Mix Yogurt w/pineapple! I made this ahead of time & the pineapple settled into yogurt & turned very sour! Pros: Easy to assemble Cons: Can't make ahead of time

OMG this is fantastic, especially when you are craving something sweet! I used canned pineapple and it was good but next time I will use fresh pineapple. This was so good and easy to make. It kind of tastes like coconut cream pie.

I used vanilla non-fat greek style yogurt, real pineapple chunks, coconut, 1/2 a banana, and a few chopped macadamia nuts. Decadent and delicious!!
