Oven-Barbecued Pork Chops

  • 1 1/2-1 3/4 pounds bone-in, 3/4-inch-thick pork rib chops, trimmed of fat
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 3 teaspoons canola oil, divided
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1/3 cup orange juice
  • 1/2 cup barbecue sauce, (see Tip)

  1. Preheat oven to 400 °F.
  2. Sprinkle pork chops with salt and pepper. Heat 2 teaspoons oil in a large ovenproof skillet over high heat. Add the pork chops and cook until beginning to brown, 1 to 2 minutes per side. Transfer to a plate.
  3. Add the remaining 1 teaspoon oil to the pan. Add onion and cook, stirring, until softened, 3 to 4 minutes. Stir in garlic and cook, stirring, until fragrant, 30 seconds. Add orange juice and cook until most of the liquid has evaporated, 30 seconds to 1 minute. Stir in barbecue sauce. Return the pork chops to the pan, turning several times to coat with the sauce.
  4. Transfer the pan to the oven and bake until the pork chops are barely pink in the middle
  5. and an instant-read thermometer registers 145 °F, 6 to 10 minutes. Serve the sauce over the pork chops.
  • Tip: Check the sodium content of your favorite barbecue sauce if you have sodium sensitivity—some can be quite high. This recipe was developed with Annie's Natural Hot Chipotle BBQ Sauce, which has only 240 mg sodium per 2-tablespoon serving.

Quick and easy This was a very tasty, quick, and easy dinner. I made sweet potato fires in the oven but started them about 15 min before the pork chops went into the oven. Pros: Few ingredients, one pan for easy clean up

These chops tasted great? It was hard to stop at just one serving. I used Stubb's spicy BBQ sauce (240 mg sodium), and only had concentrated OJ which worked fine. The sauce was tasty and not overly sweet. will make again. Pros: Easy to make!

Simple enough for beginners, delicious enough for the family chef! Because my mother has been ill, I took up cooking for my dad and myself. I looked for a simple enough recipe that I wouldn't be too confused but also something that would make my dad pleasantly surprised. This recipe accomplished both goals with ease. If you are a beginner like me and need to look up what 'minced' means and just how to best pick apart a garlic clover, you can expect the prep time to take a little longer (15-25 min). That's not really a con though, because I believe it had more to do with me than the recipe! Pros: Flavor, Simple, Fast

Popular with the Family This recipe was a hit with the family. My Dad, who isn't super-easy to please, loved it. As he said, "The sauce makes the meal. This sauce is awesome." I was worried the orange juice would create too much of a citrus-y flavor, but it really just serves to moisten the dish and the orange wasn't a noticeable flavor in the final product. I'm always nervous when a recipe requires you to place a skillet in the oven, because once it's removed, it's easy to forget the handle has been baking in 400 degree temperatures, but I think I've learned my lesson after one burn from another similar recipe, so no burns this time. Just be careful! I served these pork chops with applesauce and corn muffins made from Eating Well's "The Best Corn Bread" recipe (http://www.eatingwell.com/recipes/the_best_corn_bread.html). Yummy! Pros: Lots of Flavor, Easy to Make, Quick Meal Cons: Oven-proff skillet (It always makes me nervous I will burn myself)

I make this all the time... This was one of the very first recipes I tried when I discovered EatingWell (and was teaching myself to cook) now it's become one of those recipes my boyfriend always asks for when we're planning the weekly menu. The sauce is one of the best BBQ concoctions I've ever had, in addition to this being SO easy to make. In fact, I'm making it for dinner tonight.

Easy and delicious This was so easy and delicious. I used thick boneless pork chops and Diana sauce because it had the lowest sodium count. The orange juice gives the sauce just the right amount of tang. This recipe is a keeper!

It is hard to get my husband to eat healthy, but he loves this recipe. When he does go shopping with me, he picks out the pork chops and asks me to make this recipe again. Great and easy recipe :)
