A simple lemon-dill mayonnaise adds a touch of sophistication to smoked trout on crackers.

  • 1 teaspoon freshly grated lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon minced fresh dill
  • 1/2 teaspoon freshly ground pepper
  • 4 ounces thinly sliced smoked trout
  • 20 thin whole-grain crackers

  1. Combine mayonnaise, lemon zest, lemon juice, dill and pepper in a small bowl.
  2. Divide trout among crackers; top with a spoonful of the lemon-dill mayonnaise.

Easy, crowd pleasing recipe Only difference - put the mayo spread on the crackers first, then top with the smoked trout (as pictured). Also used with smoked salmon. Regualr water crackers work as well. Versatile recipe. In a bind tonight - too many parties - will make the mayo spread ahead of time, and finish assembly at the New Year's Party. Quick and easy. Pros: Easy, tasty, nutritious, Cons: Needs to be assembled on-site
