Marinating precooked shrimp in garlic- and lemon-infused oil is a simple yet elegant appetizer.

  • 3 tablespoons minced garlic
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup lemon juice
  • 1/4 cup minced fresh parsley
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 1/4 pounds cooked shrimp

  1. Place garlic and oil in a small skillet and cook over medium heat until fragrant, about 1 minute. Add lemon juice, parsley, salt and pepper. Toss with shrimp in a large bowl. Chill until ready to serve.
  • Make Ahead Tip: Cover and refrigerate for up to 2 hours.

These shrimp got raves from everyone at an appetizer & desserts gathering. They were light yet substantial for an event that called for more than chips, dips & cheese. The shrimp marinated just a couple of hours before serving but it was long enough for them to absorb lots of flavor. Pros: Easy do-ahead

This will be my go to shrimp marinade from this point forward.... This a really great basic recipe. I made this last week and I am going to make it again tonight. The only thing I am changing is cutting back on the salt. I find most things to be too salty for my liking and this proved to be the case in this recipe as well.. for me at least. Really great basic recipe though. Pros: simple and quick Cons: too much salt

Fabulous Fresh Flavors I will make this dish again and again. Even when the temperature outside is 2 degrees, this dish was perfect as a chilled entree. I prepared the shrimp as directed and let the dish marinate for a few hours in the refrigerator, served it with toasty bread and the result was fantastic! If I shut my eyes I could see a beach way off in the distance!! Just wishing, I guess! Pros: Light but filling!

Easy and Delicious I made this as an appetizer for a gathering last night! Huge success! I made the marinade earlier in the day and only added the shrimp @ 2-3 hours before serving. This will definitely take the place of boring shrimp cocktail at any future party!

I made this last night as directed, but instead of tossing the cooked shrimp in a bowl, I added them to the skillet and allowed them to simmer for a few minutes because I didn't want to eat them cold. This in turn created a nice sauce. I served with whole-wheat pasta for a great dinner! Next time I would reduce the oil slightly (maybe 1.5 Tbsp) although making it as instructed wasn't greasy, and add a lil white wine when I add the shrimp into the skillet. Will definitely make again... this dish took about 10 minutes to make! So easy!! My husband loved it too, and he's not a big shrimp eater. He said it was fresh and healthy!

Loved it!!! Even my 21 month old gobbled up the shrimp! We paired the shrimp with linguine in a white wine sauce. Yummy! We will be making this probably once a week!

Quick, fast, healthy and tasty!!!
