This is a delicious recipe. I used our home made salsa with which I can control the salt content. My only recommendation is to the Eating Well web site. Please allow the nutrition information to print with the recipes!
I love the recipe....like others I like to mess with them though. I did use gluten free corn tortillas but I threw them in a big pan to "dry fry" while I cooked the egg....I added the cheese and salsa on the egg in the pan so it would get and stay warm. once assembled I added diced avocado. YUM and filling. THANK YOU
It's veey good quick and easy but the corn tortilla doesn't fit it well. And i used thin ones to make it healthier....but when you try to eat the taco it starts to fall apart and soak through. I used no fat shredded cheese
Quick and Easy I too like so many other of the commentors am not crazy about the egg substitute so I mix one egg with 2 TBSP of substitute. These are better on flour tortillias I think. Try mixing in a bit of chopped smoked brisket for a truely delightful breakfast treat!
Wonderful but... Instead of the bread like they called for in the recipe to make it a taco I took out the bread (which isn't too good..) and layered the ingredients in a bowl. First eggs then cheese the salsa. It was still wonderful and I definitely would make it again! Pros: quick easy filling
I made these this morning. I generally struggle to make a real breakfast in the morning due to the fact that I always seem to be running a little behind. These were quick easy and delicious. I had egg whites in my refrigerator so I used those instead of egg substitute. The only thing I didn't like about this is how easy my corn tortillas broke when I tried to eat the taco rolled up. I will be making these again!
Great idea but can you make it gluten free and non-GMO? I too struggle with what makes a healthy breakfast. I'm going to try making this with organic eggs and cheese and gluten free tortillas (which are not whole grain) but I have no idea what the nutrient and calorie content would be. Please think of gluten free organic breakfast recipes please. Pros: Great idea and sounds yummy! Cons: Uses GMO based foods (corn) which may also have gluten.
I made these with liquid eggs not substitute. For the most part it was pretty good only thing I'll do different next time is use flour tortillas. I made them with the corn ones this time but the corn tortillas just have a strange taste to me. I ended up just eating the insides and leaving the tortillas. Cons: corn tortillas
My comment is more of a question. At the top of the page it said this recipe was high in fiber - and yet at the bottom where it listed its nutrients - it has zero grams of fiber? Which is it? But I do like all of the other suggestions. I will likely try a couple of them.:0) Sarah B Spring Valley WI
I make mine approximately the same. Only I use Flour Tortillas. I also separate the eggs using only egg white and then add the liquid eggs. I also use only cheese and no salsa. I whip the egg whites with salt pepper and onion salt and then add the liquid eggs and scramble to taste. I then put the cheese on top after I put the eggs in the tortillas. Thora DeKalb IL
Quick easy and very satisfying. The first time I made the tacos I made them as written and they seemed a little bland so now I add two chopped up pieces of Canadian bacon. They are perfect for me this way. And the Canadian bacon only adds 40 total calories. Erin Choctaw OK
I rated this poorly because the nutrition info was WAY off. 2 Small corn tortillas can vary from 80 calories to 120... Most I checked did have 2 grams of fiber... No way this recipes has 17 grams of protein. My highest calculation was 15 using a very high protein cheese... more realistic would be 13 grams of protein. The salsa is the healthiest ingredient in this recipe why limit it to 1 tablespoon? Your recipes look interesting but I really do not feel like taking the time to double check all your calculation... If you are going to offer this type of service.... DO it right... or not at all.
Are people honestly getting that upset? If you know anything about healthy eating or are remotely interested in taking care of yourself you automatically buy the healthy substitute of everything at the grocer anyways(milk cheese eggs corn tortilla= nonfat milk high protein cheese egg beaters whoe wheat tortilla) so whether or not the author directs you to make substitutions shouldnt be that big of a deal.Anyone can figure as much. Give him/her a break... its an awesome and simple recipe. Dont criticise just take the idea and improve on it if u feel u can. You can go both ways with this recipe whether u feel like being a health nut or ur hungry for some taste every once in a blue moon!
ya this is a good recipe i've been doing this forever and a day...however...corn tortillas...really? you want people to get even more corn in their diet as if America doesnt get enough corn in the first place? I'd say no corn tortillas i always use whole wheat tortillas and REAL eggs for the NATURAL vitamin and mineral benefits they provide. If possible make your own salsa too people its not hard to do and you can easily make sure the ingredients are organic...all those preservatives pesticides growth hormones and food dyes arent good for us at all. so ya make a few modifications and you have an excellent recipe here.
I make a great breakfast sandwich. whole wheat english muffin - toasted 2 oz egg substitute (guessing) chopped green bell pepper chopped vidalia onion 2 slices of lunchmeat turkey 1/2 slice american cheese 2 tsp salsa black pepper smart balance butter substitute HINT: every week i finely chop a vidalia onion and a green bell pepper then dry on paper towels for 1/2 hr. then I put into separate plastic containers in the refrigerator so I can add to my cooking any time. ======= toast the english muffin light smear of smart balance while warm. using small omelette pan spray pan then brown the turkey and add black pepper to taste. it will take on a crispy bacon-like texture and place on 1/2 of the muffin. Cook egg substitute and add onions & peppers (1 tbl of each or more if you like.) melt the 1/2 slice of american cheese onto eggs then add to sandwich. top with salsa. put other half of muffin on top. the whole thing comes out to approx 250 calories
Sounds like a great basic recipe....I personally prefer flour tortillas because they are just easier for me...........and I buy the Mission brand carb balance (100ish calories and 11g. fiber) for my breakfast burritos.......or I change it up with Thomas' whole grain English muffins for about the same calorie and fiber count. I just basically make an omelet and put it on whatever 'platform' I am in the mood for. I am not a breakfast food lover at all....so I have made myself eat breakfast by finding something interesting and flavor filled for awhile now........whatever recipe I find I add my own touches(garlic for sure) and try to make it flavorful(bell peppers onion.... which are basically calorie free) spicy full of fiber (albeit late in the day more like brunch after coffee) My (kindergarten) daughter likes her cold lunch sandwiches (PB&J) on the same tortillas or on the new (to me) Albert's brand flat breads which are also high fiber and low calorie....and they are also great for making personal pizzas for supper or weekend lunches!! My kids are wonderful fruit and veggie eaters but when I can get in the extra fiber.......in foods they love (pizza) I am all for it. No one recipe is perfect for all...use it as a stepping stone for your own inventive creation......but don't forget to add (or subtract!!!) your alterations.
Hey! Some of us are gluten-intolerant; we HAVE to use CORN tortillas - and you could use more egg whites than yolks to reduce calories and up the protein...I will try this for breakfast tomorrow as I am tired of eating toast from gluten-free bread. A tiny bit of sliced avocado would also add some good fats to this item...
Leave the fake ingredients alone. Instead (2) white corn tortillas 100 cal one scrambled egg divided 78 cal and 2tbs Arriba Roasted Red Salsa 20 cal is better and all natural. At 253 cal 50 cal less that fake cheese and egg beaters. Enjoy- Eat smart eat real eat right oh and exercise- Duane
Saute zucchini summer squash onion & sweet pepper then dump in the eggs or egg substitute to scramble with the veggies.. In the summer I chop a tomato to add after cooking I use whole wheat or whole multigrain tortillas. It adds a serving of great tasting vegetables for few additional calories.
I love to try and make new foods. I always try new things and i'll eat any thing. I made this because i thought that it lookd good. And the ingredients seemed good. Just yesterday i made this and i thought it was disgusting!!! It was the worst thing i have ever eaten. I thought i was going to throw up. It was like eating garbage!!(EEEEWWWW!!!!!!!) I dont recomend it at all.
Let's not forget that natural foods and cooking are always the way to go. Rather than use the microwave lay the tortilla flat in the pan and let cheese melt before putting eggs in to scramble. Also if you can't eat regular eggs then use the whites rather than a substitute. What the earth gives us is always healthy when used appropriately.
Delicious! I used a whole egg plus an egg white scrambled with green onion cumin chili powder and a dollop of light sour cream and heated my tortillas in a cast iron skillet with the cheese. The salsa you use makes all the difference. I used a fresh medium hot salsa with a nice smoky flavor. Although I usually make breakfast burritos this saved a lot of calories but was quite filling. Some halved cherry tomatoes and a little cilantro would be good too but these were simple enough for a fairly quick breakfast.
An Alaskan neighbor at our fish site would use similar ingredients sometimes adding homestyle potatoes sausage or bacon. He would make them by the dozen then freeze to serve later or share with fellow fisherman as he drove up the beach. When I have done this I prepare all the ingredients line them up and put the burritos together assembly style. Using salsa verde is also a nice alternative to tomato based salsa.
Really good I used 1 real egg & 1/4 cup egg substitute and added Canadian bacon (the American version) a little salt black pepper and chopped red orange & yellow bell peppers. Quick filling and really good.
Eggcredible! I love eggs! This is absolutely great! I didn't use egg beaters I choose to use regular eggs but hey whatever still a great recipe. I also used Salsa verde (my fav)! Usually I am one of those people that loads the cheese but this recipe didn't make me miss it. It gave just enough to keep me satisfied. Thanks!
