Seafood Couscous Paella

  • 2 teaspoons extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon fennel seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Pinch of crumbled saffron threads
  • 1 cup no-salt-added diced tomatoes, with juice
  • 1/4 cup vegetable broth
  • 4 ounces bay scallops, tough muscle removed
  • 4 ounces small shrimp, (41-50 per pound), peeled and deveined
  • 1/2 cup whole-wheat couscous

  1. Heat oil in a large saucepan over medium heat. Add onion; cook, stirring constantly, for 3 minutes. Add garlic, thyme, fennel seed, salt, pepper and saffron; cook for 20 seconds.
  2. Stir in tomatoes and broth. Bring to a simmer. Cover, reduce heat and simmer for 2 minutes.
  3. Increase heat to medium, stir in scallops and cook, stirring occasionally, for 2 minutes. Add shrimp and cook, stirring occasionally, for 2 minutes more. Stir in couscous. Cover, remove from heat and let stand for 5 minutes; fluff.

Complex flavors! I made this without the couscous and it was plenty filling although I used somewhat more seafood than was called for. I'm a big fan of fennel so I loved this but my husband would have preferred less of it. Pros: If you have saffron, don't skip it, but would be good without Cons: NULL

The Best! I made for about 10 or more servings and loaded up with squid, scallops and shrimp. My family loved it. Pros: Easy no hassle Cons: none

I am dieting and it is hard to believe this is under 500 calories per serving - so it is a great treat to eat something so filling. My wife liked the dish as well and insists that I make it again soon. I certainly will. Pros: Tasty, Filling, Easy Cons: Saffron threads cost a small fortune

Paella without the work I really loved this dish. Not a fan of scallops so I used shrimp and chicken sausage. I also didn't have any fennel but it didn't matter. The saffron was so flavorful and it gave the couscous such a wonderful aroma. This one is definitely a keeper! Pros: Easy, versatile and flavorful Cons:
