  • 1 small onion, chopped
  • 1 small clove garlic, minced
  • ½ jalapeno, minced
  • ½ teaspoon chili powder
  • 2 teaspoons canola oil
  • 1 cup canned pinto beans, rinsed
  • 2 tablespoons broth, or water
  • ¼ teaspoon cumin
  • ¼ teaspoon salt
  • 1 tablespoon chopped fresh cilantro

  1. Saute onion, garlic, jalapeno and chili powder in oil in a small saucepan until softened. Add beans, broth (or water), cumin and salt. Coarsely mash half of the beans in the pot and simmer until heated through. Stir in cilantro.

These were very dry I followed the directions and re-read the recipe multiple times thinking I must've missed something because they were soo dry and would not mash up. Seems like there should be more water or something? Pros: Easy Cons: Dry, wouldn't mash up

Fantastic This is our new go-to, whether for a side dish, or for tortilla-stuffing for packed lunches. The prep is very simple, and taste is fantastic. When we don't have any broth handy in small quantity, we've used water instead, with no negative impact on flavor. Pros: Great tasting, easy prep, healthy

Very tasty and satisfying method Great recipe. Quick and amazingly falvorful. The restrained amount of cumin and jalapeno work together perfectly. over white rice, it's a very satisfying meal with complex flavors.

Very Tasty This is a great way to serve beans. I use this to replace meat in my meal. I add a little extra vegetable broth, as I like to serve this over brown rice. Very Healthy Pros: Easy to Prepare Cons: None

Simple and very good. Only change was to add a little coriander and dash of cayenne instead of the jalepeno.
