Buttermilk-Herb Mashed Potatoes

  • 1 large Yukon Gold potato, peeled and cut into chunks
  • 1 clove garlic, peeled
  • 1 teaspoon butter
  • 2 tablespoons nonfat buttermilk
  • 1 1/2 teaspoons chopped fresh herbs
  • Salt & freshly ground pepper, to taste

  1. Place potato in a small saucepan and cover with water. Add garlic. Bring to a boil; cook until the potato is tender. Drain; add butter and buttermilk, and mash with a potato masher to the desired consistency. Stir in herbs. Season with salt and freshly ground pepper.

Light and creamy -- delicious These were delicious mashed potatoes. I did not have any herbs available so I made them without. They were still terrific - light and creamy. I was worried that the butter would not be sufficient but that was not the case. Yummy.
