Combine 1 1/2 teaspoons mustard, salt and pepper in a small bowl. Rub all over pork.
Heat oil in a medium skillet over medium-high heat. Add the pork and cook until browned on both sides and cooked through, 2 to 3 minutes per side. Transfer to a cutting board and cover with foil.
While the pork is resting, heat vinegar in the skillet over medium-high heat. Boil, scraping up any browned bits with a wooden spoon, about 30 seconds. Whisk in the remaining 1 tablespoon mustard and maple syrup. Bring to a boil, reduce heat to a simmer and cook until the sauce is thickened, about 3 minutes. Add any accumulated juices from the pork to the sauce, along with sage. Serve the pork topped with the sauce.

so easy and yummy!
These were great! My fairly average pork chops took about 4-5 min each side. I also added a little chicken broth as there was not much sauce. Delish!

This flavor combination is great, obviously - pairing mustard and sweet maple! I needed more sauce so I added chicken broth by the tablespoon until I was happy. Served this with boiled potatoes tossed with butter, parsley, salt and pepper. Easy and brainless, goof-proof recipe!

This is an amazing recipe, I live in Scotland and had to substitute the canola oil for olive oil but otherwise I stuck with the recipe and it was perfect! very easy to do and meat was very tender in no time, Will Definitely have this again. Thanks EW for a brilliant website!!

I love this recipe. We buy the the thick pork chops at Costco and cook them longer. You can move the amounts of ingredients around and the flavors still work. We serve w/ baked potatoes and apple sauce. Maple syrup and mustard, "who'd have thunk it".
