Lemon Lovers' Asparagus

Roast whole slices of lemon along with the asparagus for a beautiful look and sparkling, bright taste. Great with seafood, especially salmon or scallops.

  • 2 bunches asparagus, tough ends trimmed
  • 2 lemons, thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 4 teaspoons chopped fresh oregano or 1 teaspoon dried
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper

  1. Preheat oven to 450 °F.
  2. Toss asparagus, lemon slices, oil, oregano, salt and pepper on a large rimmed baking sheet. Roast, shaking the pan occasionally to toss, until the asparagus is tender-crisp, 13 to 15 minutes.

Yummy! I made this for my husband and me, adding 2 teaspoons of fresh lemon juice and italian seasoning instead of straight oregano (2 tsp) as well as one finely minced garlic clove & 1 tsp. of good white wine. It was positively devine!! My husband - who doesn't care for asparagus - loved it & wants it in the regular rotation! Sooooo great! Pros: Healthy, easy, quick, DEEEELICIOUS!

many delicious uses This is a delicious and easy preparation. After preparing the asparagus, we cut into one-inch pieces and tossed with whole wheat penne pasta.

So simple, so great! Good warm or at room temp. I used lemon juice too for great tang.
