This was delicious & I felt so healthy eating what is good for me - sweet potatoes & black beans. I followed recommendations of others by adding frozen corn fresh garlic smoked paprika & chili powder. No sour cream in frig so I sweetened Greek yogurt w/maple syrup. This will definitely go in the rotation. Thanks.
I didn't have any fresh cilantro so used fresh chives instead. Served with an avocado salad with lime wedges. My vegetarian friend asked for the recipe. I thought she was going to lick the plate! This is a keeper.

I gutted most of the potato out and added a mixture of rotiserrie chicken black beans canned tomato with chiles and jalapenos. Used a tbsp of FF plain yogurt (I don't like greek) and a sprinkle of sharp cheddar. Was very good (sweet and spicy!) and very easy. (I cello wrapped the poked potato and it only took about 5 mins in the micro).
Startlingly Rich! While I would have liked some kind of treatment to the skin the overall dish was fantastic. I used canned diced tomato instead of fresh but it made little difference. The richness of the potato with the beans and tomato really sang and has made this my new go-to quick dinner! Pros: Wonderful texture great flavor combinations easy Cons: No treatment to the skin
Great! I love this recipe and make it all the time. It's so easy to keep a few sweet potatoes can of black beans and a tomato on hand and then voila! I usually add minced fresh garlic with the beans mixture and more spices like paprika and red chile powder and skip the cilantro all together if I don't have it. Also topped with greek yogurt instead of the sour cream tastes just as delicious. Enjoy! Pros: easy can keep items on hand
Fast-easy-cheap-yummy! I have made this about ten times now and never get tired of it. The Hubs hates cilantro so he just doesn't put it on. I had no idea how fast and easy nuking sweet potatoes is! The flavors are outstanding for such a simple meal. I use this as a meatless weekday meal. It's so low in calories you can add a tossed salad or do what I do and indulge in desert lol.
Just A Quick Question....? I lost 35 lbs in 1 summer on the low carb (& tried to limit processed foods....hard to do when u have chronic pain!) anyway I know there is a good way to do low carb & a bad way! But it is waaay confusing! The carb count in this recipe is very high for 1 serving. So r u saying its ok cuz it's not processed white sugar? That its natural healthy when its a veg? Oh so yummy!!! Um yum?!?!!! This was so so good! My husband and I both ate it up and licked our plates and it was super easy to prepare. The only subs I made were adding in some frozen corn and using canned diced tomatoes in place of fresh diced. I also baked the sweet potatoes in the oven (at 375 for 1-1.5 hours) instead of nuking them. I'm not one for fancy presentations so the hubs said he'd prefer to just mash everything together next time as opposed to serving the black bean salad 'on top' of the potatoes but he's a mix-it-all-up sort of guy;) I forgot to put the Greek yogurt (or sour cream) topping on but we didn't even miss it! Definitely will make this again!! In fact tonight for dinner! Pros: Healthy easy Cons: Leaves you wanting more more more!;)
Just add lemon I just added lemon juice to cut the sweetness of the kumara a bit and also added sliced green and red onion to the bean salad to make it a bit more exciting. Fantastic! Pros: Fantastic base

Quick and delicious This recipe was quick delicious and very nutritious. I used non-fat greek yogurt instead of sour cream for even fewer calories. I pared it with roast chicken for a complete meal. It would have made a great lunch by itself.

Nice quick meal This was so easy to make and very filling! Even my fiance who doesn't like sweet potatoes enjoyed this. It was tasty but definitely needed the sour cream for extra flavor. I used canned diced tomatoes instead of fresh and extra cumin instead of coriander and it still tasted fine. I definitely recommend this for a quick easy meal. Pros: Easy healthy filling
Fantastic! Because I had it on hand already and it's made primarily from Coriander and Cumin I used two teaspoons of Garam Masala instead. It was delicious. It has Cinnamon in it which worked really well with the sweet potatoes. Since I had plenty of time I baked my potatoes in the oven and heated my black bean salad on the stove. The whole family loved it including our six year old. I'll definitely make this again and again. Pros: Quick Easy Nutritious
This was so yummy and easy. I peeled cubed and boiled my sweet potato instead of nuking it then just put everything in a pan except the sour cream to heat together. My one year old thought it was pretty good too and the cubed pieces made it easier to eat without too much of a mess. I will make this again and if I have time roasting the sweet potato in the oven would probably make it tastier.
I used curry powder instead of cardamon and 1/3 of a can of tomatoes instead of fresh. It was really tasty. My son had some of the leftover bean mixture pureed and used it as a dip for corn chips. I'm glad I have some leftovers for tonight!
Ive never even tried a sweet potato but when I saw the picture if this recipe I just had to try it. It was very easy to make and the balance of flavors was perfect. Would be a great recipe for someone who wants a delicious meal but doesn't have a lot of time!! I will definitely make this again VERY soon. ( My brother is a very finicky eater and he LOVED it. Cleaned his plate and finished mine!!! )
This was by far the best recipe I have tasted yet from EatingWell and I've tried many delicious ones. As everyone else mentioned the combination of flavors was excellent and this dish together with a green salad made for a light yet filling dinner. The only things I changed were to substitute yogurt for sour cream which worked just as well and instead of microwaving or baking the potatoes I started them in the microwave for about 9 minutes then finished them off by baking giving it a better crust.
WOW! This was so delicious! Something this healthy should not taste this good! I had added a 10 ounce can of corn (drained and rinsed) to the mix and i used regular sour cream instead of low fat. But even with that its still a very healthy meal. My biggest surprise with this dish was how sweet it actually was. The company that i shared this meal with had asked if i put butter on the potatoes to which i happily replied "nope" to. This is a must try! And a keeper for sure! Can't wait to make it again next week! C

Very good - the "salsa" was unexpected on the sweet potato but delicious - everyone in my family enjoyed it (even my 3yo!!!). I used kidney beans (no black beans) and omitted the cilantro but it was still delicious. I had the whole thing ready in less than 10 minutes. Hard to believe something this good could be ready this fast. It will be hard NOT to make this a new weekly staple.:)
Super super yummy! Made these today for lunch and added a couple cubed white mushroomsin with the bean mixture. After putting the sour cream on I tossed a bit of diced jalapeno and they were super delicous! I will defnilty be making this again! I just Love love love love this site!
Yummm. I plan to keep some sweet potatoes on hand and have some of the bean and tomato salad pre-made in the fridge every week because this is something I know I'll eat with regularity. Amazing what a little cumin and coriander can do!
This is a delicious recipe that my entire family loves including a 4 year old and 1 year old! The "salsa" on a sweet potato made me hesitant to try it but I'm so glad I did. It's very filling and has now become a regular!

I thought it was okay. Maybe my expectations were high because of all the great reviews I read but I wasn't that excited. I thought it needed a little too much sour cream to combat the dryness of the beans and potato. It wasn't bad and I finished the whole potato but I won't make it again. My husband liked it better than I did.

Followed the recipe to the letter - at first I thought the corriander & cumin amounts may be too much but it was perfect. This One's a Winner This has become one of my favorite recipes. It's one of the quickest recipes I make. It's very good as is but I often will add cooked chicken jalapenos chipotle powder guacamole and/or cheese. It also tastes wonderful with russet or red potatoes if you aren't a fan of sweet potatoes or yams. Pros: easy healthy satisfying crowd pleaser
