  • 1 cup light Boursin cheese, divided
  • 4 ounces thinly sliced bell pepper

  1. Spread each steak slice with 1 teaspoon Boursin cheese and top with bell pepper slices. Roll the steak around the bell pepper slices.

Elegant, Simple & Delicious This recipe was definitely a hit at a party. I used grilled ribeye steak, cooked medium rare, same cheese as listed above, along with red and green bell peppers. I highly recommend you try it! It's very simple and takes no time at all to make, your family and friends will love it! Pros: very easy, quick

few questions .. I have a couple questions. First off how thin is thin sliced? Can the deli counter slice it for me? Is it already cooked when you wrap it, or cook it with the cheese and peppers?

Simple, delish, & pretty... These are easy to make if you use deli roast beef, I used smoked roast beef. You can use any color peppers -- I used red, orange, and yellow. I also used Jalapeno sprears for my friends who like a little bite. Pros: easy to make Cons: none

Took these to a party - they were a huge hit. My husband, who doesn't like peppers, loved them. I used deli roast beef and also made some with deli turkey. Make sure it isn't sliced too thin or it falls apart while you're spreading it.
