I tried this recipe last night with Sweet Baby Ray's barbecue sauce and it was delicious! Instead of rotisserie chicken I cut up and grilled two chicken breasts and it worked very well. I would definitely make this one again!
I loved this recipe! I did add a little more sour cream than it called for because the bbq sauce I used was very strong and dominated the flavor too much. I would highly recommend this recipe though. I am definitely keeping it on my list of favorites! Very quick and easy to prepare too!
Made this recipe last night and it was great. My picky husband and kids enjoyed it! Instead of roasted chicken I sliced up some chicken breasts and sauteed it with salt pepper garlic powder cumin and finished it with lime juice. The barbecue sauce and sour cream mixture is a delightful combination creamy and tangy but not rich. This recipe is a keeper!
It's very rare for my husband to say "This is really good " but this was one of those times. I'd make it again with white tortillas even though it's less healthy. We added tomatoes.
I loved everything about this recipe! It tastes GREAT and is super simple to make. This is only my third recipe to try from this site but it is one that I will definitely make again I just added it to my favorites.
This is my first recipe I made from eatingwell. I oven baked chicken breast seasoned with black pepper paprika cumin garlic/onion powder and red pepper flakes then shredded that to use. I had two nice size breast. It came out really good. I didn't think of it until after eating but in order to cut out more calories I could have just ate it as a lettuce wrap in the romaine instead of the whole wheat wrap. I added some advocado and pico de galo to mine too. I will make again.
After a long week I was looking for something easy and healthy (but still delicious!) to make for dinner for my husband and I. I grabbed a rotisserie chicken from the grocery store and whole wheat tortillas. Everything else I had at home already ( I LOVE when I find recipes with things I usually have in the pantry) so I was able to whip this together quickly. It was soooo good. I put some shredded cheese on the tortillas I pan-warmed for my hubby (what can I say the man loves cheese and never gains any weight). With or without the cheese though it was still fabulous! I usually can't make a recipe without adding a bunch of my own ingredients and spices to it but with this all I did was add a little cayenne for spice. The rest was perfect!
Very delicious recipe and it is extra tasty if you add tomatoes I added some chunky salsa and that gave it a little more bite. I also just cooked my chicken breasts in a pan first with salt & pepper half a lemon squeezed and a whole lime squeezed. Added a nice fresh citrus taste. I squeezed more juice into pan when I was mixing up the corn/bean ingredients as well. The barbeque sauce adds an unexpected twist and when I was finished I didn't feel heavy and slow I felt recharged and content. Great easy recipe I will make again soon. -Emily in PA
I just made these and they were sooo good!!!! Instead of onion I used green pepper and I grilled the chicken with a tex-mex spice on it. I also added a bit of garlic and tex-mex spice to the green peppers. The bbq sauce gave a nice hint of flavor. It was easy and quick. Love this and will make it again!!
