Too dilly and not enough zip I followed the recipe to the t but when it was done it was only okay. It seemed like it needed a little more zing to it pepper? lime instead of lemon? maybe flat parsley instead of dill? I wish I could have loved this because the ingredients are staples and it was so easy to make. Pros: Very easy to make Cons: The dill was almost overpowering.
Go-to comfort food This soup is almost perfect as is - just some minimal modifications. I used a rotisserie chicken upped the garlic and doubled up on the veggies. I use the full amount of dill and added a bit more lemon juice (about one whole small lemon worth). Top with some fresh shaved asiago cheese to ground the soup and it is perfection!
My go-to comfort food I have been making this soup for years and it has truly become a family staple comfort food. I always double the veggies and add a bit more garlic. Other than that it is perfect! The smell of the ginger and garlic cooking is almost as comforting as the finished product. I will pass this recipe on to keep in the family for years to come!
Wonderful soup if you enjoy dill! I made this soup the other day and loved it! I'm a huge fan of the flavor of dill so when I saw this recipe I had to try! The only change I made to the recipe was I put diced tomatoes and extra celery in the soup instead of having carrots in it. I did this because I can't stand the taste of carrots. I was unsure of how tomatoes would taste in chicken noodle soup but I was more than pleased with the results! I don't think I'll be preparing this type of soup with out them for now on! I would highly recommend this addition to anyone! I froze the extra so I can keep enjoying the rest of this fantastic recipe! Pros: Delicious Simple to prepare wonderful for leftovers
Love this version of Chicken Noodle soup! Only thing I can say I really modified is I think I really only put 2 tablespoons of fresh minched ginger cause I'm not a huge ginger fan and I think I have more than a pound of chicken! =
amazing I'm normally not a chicken noodle soup person at all since it usually tastes so bland no matter how much salt and pepper I add. But decided to make this super healthy version for my sick husband. Its seriously the tastiest chicken soup I've ever had! The dill and ginger make all the difference in the world!
Light and Flavorful! This is the best chicken noodle soup I've ever made and will keep this in my permanent file! My kids loved it. I bought two roasted chickens and removed the skin and shredded the breast meat. I used organic broth and vegetables. I minced all vegetables so the soup wasn't so chunky except for the chicken and noodles. The combination of ginger dill and lemon gave the soup flavor beyond belief!
This soup is very good but without the salt of other soups you really need to squish up the garlic and ginger and add the full amount of dill if it is going to have flavor. Also I added more than the 4oz recommended of noodles and that did not help things any. I would stick with the 4oz. It was solidly good but I did add some additional salt for flavor which alters the recipe in an unhealthy fashion and I think is kind of against the whole idea.
This recipe is great so basic and easy. It is just a base to so much more. I add more garlic pepper took out the dill and added tyme and bay leaves for a more woodsie taste. I also cooked the broth and veggies for a few hours then added the noodles just before serving. Pruudiddy E.P. MN
I just made this tonight and the family loved it. I didn't have reduced-sodium chicken broth so I used a combination of regular chicken broth and bouillion. Also I didn't have whole wheat egg noodles and used regular. I only used one large clove of garlic since my kids are small and picky. I did use the ginger and dill but eyeballed it and probably used less then it called for. But it was still chock full of good for you veggies and chicken and the little ones ate it up. Will definitely make it again but will add more carrots and celery next time. Christina Las Vegas NV
