“Soaking oats and fruit in yogurt is how muesli is traditionally made. A great make-ahead breakfast if you're pressed for time in the morning but still want a healthy start to your day. Serve with sliced fruit and toasted nuts.”
1 cup uncooked oats, (quick or old-fashioned)
2 cups nonfat plain yogurt
1 8-ounce can crushed pineapple, (undrained)
3 tablespoons honey
1 teaspoon vanilla extract
1Stir oats, yogurt, pineapple, honey and vanilla until blended. Cover and refrigerate overnight.
People with celiac disease or gluten-sensitivity should use oats that are labeled “gluten-free,” as oats are often cross-contaminated with wheat and barley.
