Soaking oats and fruit in yogurt is how muesli is traditionally made. A great make-ahead breakfast if you're pressed for time in the morning but still want a healthy start to your day. Serve with sliced fruit and toasted nuts.

  • 1 cup uncooked oats, (quick or old-fashioned)
  • 2 cups nonfat plain yogurt
  • 1 8-ounce can crushed pineapple, (undrained)
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract

  1. Stir oats, yogurt, pineapple, honey and vanilla until blended. Cover and refrigerate overnight.
  • People with celiac disease or gluten-sensitivity should use oats that are labeled “gluten-free,” as oats are often cross-contaminated with wheat and barley.

This was super great! I used greek plain yogurt, and I love how smooth it came out. The taste was incredible. I will make over and over again.

Delicious, healthy breakfast This muesli is really delicious. I made this on Sunday night before bed, and followed the recipe exactly except I halved the recipe, only making 3 servings since I wasn't sure if I was going to enjoy it. I have now enjoyed it two mornings in a row, and I love the pineapple in here; I would have never thought to marry pineapple and oatmeal together but it works wonderfully. I only added a tiny bit of honey since I wanted to keep the sugar count a little lower, but I didn't really miss the extra sweetness. It keeps me full until right around lunchtime which is always a plus. You should definitely try this as a cold and filling alternative to your regualr boring oatmeal! Pros: Make ahead meal, keeps me full

yummy and easy! I use the base of 1 cup of yogurt to 2 cups oats provided in this recipe and add blueberries (1/2 c) and diced apple (1 small). I used 1tbs of molasses for sweetener (trying to use it up), honey is great though too. Its great to make ahead, and even my husband remarked at how long this kept him satiated the day we had it for breakfast. Its also a great way to keep oatmeal in your diet in the summer when a hot breakfast isn't so appealing. Pros: Make ahead
