Roasting fruit brings out its inherent sweetness. Try serving these alongside grilled pork chops.

  • 4-5 ripe plums, (about 1 pound)
  • 1½ teaspoons lemon juice
  • 1 tablespoon sugar

  1. Preheat oven to 425°F. Slice plums in half and remove pits. Toss the plums with lemon juice in a large bowl; add sugar and toss once again. Arrange the plums cut-side up in a shallow baking dish. Roast for 20 to 25 minutes, or until tender. If the juices in the pan begin to burn, add a little water and cover the pan loosely with aluminum foil. Let cool slightly before serving.

The recipe called for water to be added to the baking dish during baking. I tried this and my glass baking dish shattered. I should've known better, but I can't think of this working in a ceramic dish either. I'm not sure what pan type, other than metal, could handle room temperature water when baking. So, add water before putting it in the oven.
