  • 1 cup unsweetened pineapple juice
  • 2 tablespoons coarsely chopped crystallized ginger
  • ¼ cup club soda
  • 1 pineapple spear, (optional)

  1. Combine pineapple juice and ginger in a blender and blend until nearly smooth. Strain into a tall glass over ice. Stir in seltzer and garnish with a pineapple spear, if desired.

A good start Though I liked this drink and found it refreshing, I thought that the ginger flavor could have been a little stronger.
