Seasoned Couscous with Lemon & Mint

“Golden grains of couscous readily absorb the flavors of lemon, onion, herbs and spice.”

Ingredients

    • 2 cups water
    • 1⅓ cups couscous
    • ½ red onion, finely chopped
    • ¼ cup chopped fresh parsley
    • ¼ cup chopped fresh mint
    • 1 teaspoon salt, preferably kosher
    • 1 teaspoon Moroccan Spice Mix, (recipe follows)
    • 1½ teaspoons freshly grated lemon zest

Directions

  • 1 Bring water to a boil in a saucepan; stir in remaining ingredients and remove pan from the heat. Cover and let sit for 5 minutes. Transfer to a serving dish, fluffing the couscous with a fork.
