Apricot Whip with Raspberries

½ cup firmly packed dried apricots
½ cup orange juice
¼ cup sugar
2 tablespoons brandy, or 1 teaspoon vanilla extract
1½ cups nonfat plain yogurt
1Combine apricots, orange juice and sugar in a medium saucepan. Bring the mixture to a boil; reduce heat to low and simmer gently until the apricots are tender, about 12 minutes.
2Transfer the apricots and cooking liquid to a blender or food processor, add brandy (or vanilla) and puree. Transfer to a medium bowl and stir in yogurt. Chill until serving time. Serve topped with raspberries.
