Apricot Whip with Raspberries
Combine apricots, orange juice and sugar in a medium saucepan. Bring the mixture to a boil; reduce heat to low and simmer gently until the apricots are tender, about 12 minutes.Advertisement
Transfer the apricots and cooking liquid to a blender or food processor, add brandy (or vanilla) and puree. Transfer to a medium bowl and stir in yogurt. Chill until serving time. Serve topped with raspberries.
