Orzo, a rice-shaped pasta, makes a delightful base for an authentically Greek combination of shrimp, tomatoes and feta. To serve as a side dish, omit the shrimp and drain the tomatoes before adding them.

  • 1 1/2 teaspoons extra-virgin olive oil
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 28-ounce can diced tomatoes
  • 3 tablespoons chopped fresh parsley, divided
  • 1 tablespoon drained capers
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt, or to taste
  • Freshly ground pepper, to taste
  • Pinch of crushed red pepper
  • 1 pound medium shrimp, (30-40 per pound), peeled and deveined
  • 1 cup orzo
  • 1/2 cup crumbled feta cheese

  1. Preheat oven to 450 °F. Coat a 9-by-13-inch (or other 3-quart) baking dish with cooking spray. Put a large pot of lightly salted water on to boil.
  2. Heat oil in a 2-quart saucepan over medium heat. Add onion and garlic and cook, stirring, until softened, 3 to 4 minutes. Add wine and cook for about 1 minute. Stir in tomatoes, 1 1/2 tablespoons parsley, capers, oregano, basil, salt, pepper and crushed red pepper; cook for 5 minutes. Drop in shrimp and cook, stirring, until barely pink, about 2 1/2 minutes.
  3. Cook orzo in the boiling water until tender but still firm, 8 to 10 minutes. Drain and transfer to the prepared baking dish. Toss with the tomato-shrimp sauce. Sprinkle with feta and the remaining 1 1/2 tablespoons parsley.
  4. Bake, uncovered, until the feta is bubbly, about 10 minutes.

Quick and Tasty! I make this almost every other week for my husband and me for dinner. It's quick, easy, and cheap when you shop Buy 1 Get 1 Sales. Sometimes I buy the diced tomatoes with green chilies to add an extra kick. Pros: Quick, Cheap, and Tasty!

Absolutely delicious! I've made ths several times and I just love it- everyone that has tried it also loves it. I chop up some kalamata olives instead of using capers (just not a huge fan of capers). Highly recommend!! Pros: Fast and easy Cons: Some chopping

Easy, fresh-tasting meal that makes great leftovers This just kept getting better each day, even though the parsley got a bit wilted. Next time I might add a cup or two of fresh chopped kale or chard. I also didn't have capers so substituted black olives. Wish I'd added more -- as they're less salty than capers, they didn't add the same kick. Still -- great dish, and great leftovers. Pros: Tasty, fresh, but filling

Delish! I used kalamata olives chopped up instead of capers (didn't have any on hand and too lazy to go to the store). I'm not sure how it was supposed to taste with the capers, but the flavor with the olives was fantastic! Enjoy!! Pros: Super yummy and filling, loved it!

Tasty and easy! I used brown rice because store didn't have whole wheat orzo, used italian seasoned tomatoes so I wouldn't have to buy the italian seasonings, used extra feta and capers, omitted crushed red pepper as I didn't have any. Turned out tasty and easy!

excellent! great meal - I used diced tomatoes with green chilis to pack a bit more punch - will properly go without the capers next time - super yummy!

Very good This recipe says it serves four, but it could easily serve six. Delicious--even very picky boyfriend loved it. Simple flavors, very good.

Delicious! This was so easy to make and it was so very good! I had most of the ingredients on hand and only needed to buy the feta and that shrimp. The portions were huge. I made it with whole wheat orzo which gave the dish a nice nutty flavor. I barely cooked the shrimp on the stove and they were perfectly done when they came out of the oven. I have already passed this on to my dad and told him that he has to make it!
