1 1/2 teaspoons extra-virgin olive oil
3 cloves garlic, minced
1 28-ounce can tomatoes (with juices), chopped
2 tablespoons tomato paste
2 teaspoons fresh chopped oregano, or 1/2 teaspoon dried
1 teaspoon fresh thyme, or 1/4 teaspoon dried
Salt & freshly ground pepper to taste
Heat oil in a large saucepan over medium heat. Add garlic and saute until lightly browned, about 2 minutes. Add tomatoes, tomato paste, oregano and thyme. Reduce heat to low and simmer, uncovered, stirring occasionally, until thickened, about 30 minutes. Season with salt and pepper.
