Chèvre Mashed Potatoes

Goat cheese adds a creamy, slightly tart dimension to mashed potatoes.

Ingredients

Preparation

  1. Place potatoes in a large saucepan, cover with cold water and add 1 tablespoon salt. Bring to a boil and cook until the potatoes are tender, about 10 minutes. Drain and return the potatoes to the pan. Shake the pan over low heat to dry the potatoes slightly. Remove the pan from the heat.
  2. Mash the potatoes with a potato masher, ricer or food mill. Stir in goat cheese and enough hot milk to make a smooth puree. Season with salt and pepper.
