Ingredients
1/2 cup chopped pitted prunes
3 tablespoons Armagnac, or Cognac
3 cups nonfat vanilla frozen yogurt
Preparation
Stir prunes and Armagnac (or Cognac) in a saucepan over low heat until the prunes are softened, about 1 minute. Transfer them to a plate to cool.
Soften frozen yogurt in the microwave on Medium-Low for 30 to 60 seconds. (Alternatively, allow the frozen yogurt to soften for 10 to 20 minutes at room temperature.) Transfer to a bowl and stir in the prunes with a wooden spoon or whisk until well incorporated.
Scoop into dessert dishes and place in the freezer to firm up for about 30 minutes.
