Ingredients
1 small clove garlic
1/2 teaspoon salt
3 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
1 teaspoon honey
2 tablespoons chopped scallions
2 tablespoons slivered fresh mint
Freshly ground pepper, to taste
Preparation
Mash garlic with salt, using the side of a chef’s knife. Transfer to a small bowl. Add lemon juice, oil and honey; whisk to blend. Stir in scallions and mint and season with pepper. Serve immediately.
