Papaya Relish

Ingredients
- 2 cloves garlic, crushed and peeled
- 1/2 teaspoon kosher salt
- 3 tablespoons rice-wine vinegar
- 2 teaspoons sugar
- 2 teaspoons hot sauce, such as sambal olek or
- 1 firm papaya, peeled, seeded and diced (1 1/2 cups)
- 1/2 cup finely diced red onion
- 1/4 cup chopped fresh cilantro
Preparation
- With the side of a chef’s knife, mash garlic with salt. Transfer to a small bowl and whisk in vinegar, sugar and hot sauce. Add papaya, onion and cilantro; toss gently to mix.
