Stuffed Nectarines

A filling of spicy gingersnaps and brown sugar is a lovely contrast to the sweet baked nectarine.

2 servings, 1 stuffed nectarine half and 2 tablespoons yogurt each | Active Time: 5 minutes | Total Time: 30 minutes

  1. Preheat oven to 350°F. Place nectarine halves cut-side up in a small baking dish. Combine gingersnaps, butter, sugar and lemon juice; divide between the nectarine halves. Pour orange juice around them. Cover with foil. Bake until tender, about 25 minutes. Serve with low-fat vanilla yogurt.
