- 1 cup unsweetened pineapple juice
- 2 tablespoons coarsely chopped crystallized ginger
- 1/4 cup club soda
- 1 pineapple spear, (optional)
- Combine pineapple juice and ginger in a blender and blend until nearly smooth. Strain into a tall glass over ice. Stir in seltzer and garnish with a pineapple spear, if desired.
