A couple of weeks ago, my lovely colleague Penelope blogged about lazy lasagna & more sneaky comfort food shortcuts . I’m all about taking shortcuts, especially when I’m pressed for time and have to get dinner on the table fast  (In fact, I’m the one who developed that “lazy” recipe for Inside-Out Lasagna  in the EatingWell Test Kitchen.)
But I’m married to one of those men who relishes the process of cooking and savors the results of his labor. I can’t complain. One of my husband’s favorite cooking projects is making lasagna. He’s mastered EatingWell’s classic lasagna , and even figured out tricks to make lasagna healthier .
Now that it’s spring, I want a lighter lasagna. One of our favorite spring recipes  right now, since it makes the most of fresh seasonal spinach and onions, is Caramelized Onion Lasagna. I developed this recipe in the EatingWell Test Kitchen and I love the creamy Gorgonzola cheese and the crunchy toasted walnuts on top. Yes, it takes some time to make. But it’s worth the effort. (Especially when it’s my husband who’s making it!) His effort isn’t wasted on one meal. There are only two of us and lasagna makes great leftovers, giving us plenty of ultra-quick meals  to savor later.
Here are some more awesome lasagna recipes (and even a “shortcut” recipe done in 45 minutes!):
Lasagna Rolls  Crumbled tofu replaces the ricotta in our Italian-style vegetarian meal. This one is ready in just 45 minutes!
Seafood Lasagna  Shrimp, sole and salmon come together in a beautiful lasagna dish. Serve with an arugula salad and crusty whole-grain baguette.
Sausage, Mushroom & Spinach Lasagna  This cheesy lasagna is full of spicy Italian turkey sausage, whole-wheat noodles, mushrooms and spinach. A serving of this version has about one-third the fat and saturated fat, and only half the calories of the original. Use soy-based sausage for a hearty vegetarian variation.
Caramelized Onion Lasagna  This unusual lasagna with portobello mushrooms, sweet onions, spinach and Gorgonzola cheese has a rich, complex flavor. It's also great with goat cheese instead of Gorgonzola, if you prefer.
