In the EatingWell Test Kitchen, we use cooking spray because it’s a convenient, healthy way to coat food or surfaces with a thin layer of oil. Many cooking sprays contain propellants to push the oil out of the can in a uniform spray. The propellants are on the U.S. Food and Drug Administration’s “Generally Recognized As Safe” (GRAS) list and considered safe to consume, but they are hydrocarbons, which are greenhouse gases. As an alternative, you can use a manual pump oil spray bottle. When using a manual sprayer, you need to reprime the pressure several times to release enough oil to generously coat foods.
