I was surprised by the statistics in the article and at the same time concerned about the long term health issues surrounding eating so much processed foods. We will not be a healthy nation if we don't understand the source of our foods, eat produce grown locally and protect our farm lands. It is imperative people learn how to cook.

By cooking do you really mean meal preparation? I prepare food, but I rarely "cook". On a typical morning I prep the veggies for the day, rinse the sprouts, pour water out of the soaks (sunflower seeds, chickpeas), setup the automatic rice maker to make some brown GABA rice or quinoa, setup the crockpot with the vegies and previously soaked beans, make fresh cole slaw as needed, give the vegetable trimmings to the worms in the vermiculture bin, and check on the indoor garden of spinach, green onions, cherry tomatoes, and lettuces. That's about 30 minutes a day, tops--this feeds a family of four all day with very little effort. And it's fun. I love to see what's growing in the garden. We love fresh cole slaw made with chopped kale, cabbage, and carrots. The dressing is made with fresh lime juice, miso, tahini or cashew butter, mirin, brown rice vinegar, agave syrup, sesame or peanut oil (cold pressed), tamari, sea salt, raw sesame or sunflower seeds.

We are now semi-retired, the children are grown, and we live out from town: we cook *every* meal at home-- breakfast, lunch and dinner. This was not true when we both worked, lived in town (where restaurants were convenient), and had the children's after-school activities pushing everyone out of the house all afternoon. Then, we often picked up Chinese food or even burgers several times a week.

Actually, my husband does most of the cooking, but we eat at home most of the time. We prefer our own cooking to that in restaurants.

The 5 to 7 days includes the fact that my husband and I take turns cooking; we do eat at home almost all the time.

I love cooking, so I cook every day. I work full time, so on my days off when I have more time to devote to cooking, our meals are more elaborate. I can't wait to see the cookbook when it comes out!!!
