I love this book as well. We have tried the delectable chocolate chip cookies, crepes, popovers, pancakes and chocolate chip muffins. Everything is a winner. The best advice the author gives you is to buy EXTRA FINE brown rice flour. When I used the regular organic brown rice flour, her recipes were good but not great. When I made my GF flour mix using the exra fine brown rice flour (found online), all of the recipes were fabulous. Makes a huge difference in the pancakes and waffles. With plain pancakes and waffles, I would definitely recomend adding a touch more flavor than she suggests, such as some spices or a little vanilla extract. I substitute 1/4 c. of the water for either pumpkin puree or apple sauce and then add a corresponding spice such as nutmeg or cinnamon. This makes my pancakes and waffles extra flavorful and interesting. Sometimes I sub out the other 1/4 c. of water for buttermilk.

I highly recommend this book. Everything that I have made, we have really liked. The chocolate cake recipe is wonderful.
