It feels like eating, or making choices about what to eat, is getting harder. Since I started reading books like Michael Pollan’s The Omnivore’s Dilemma (read our interview with him here) and watching movies like Food, Inc. (just released on DVD) that explore how our food system works from farms to our tables, I have a lot more to think about than just taste. Now before I take a bite, I consider where the food was grown and if the farmer used pesticides or hormones, among other concerns.

My husband and I are fairly active people, but we’re always looking for more ways to shed a few pounds. (Who isn’t, right?) So when I read that adding more fiber to your diet can help you lose weight, I started to think about where I could sneak in some extra fiber during the day.

Fiber at breakfast and dinner is something we already get a healthy amount of, so lunch seemed like a good place to experiment with new ideas.

I grew up in a football-loving family. As a kid, my family traveled to most of the University of Michigan games and I loved tailgating (and eating the the yummy tailgating snacks) as a student at University of Wisconsin. When I lived in Minneapolis, I became a fan of the Minnesota Vikings (Go Adrian Peterson!) and ended up getting really into fantasy football.

I love food and from time to time, like on Thanksgiving, I've been known to eat too much. Since I only eat Green Bean Casserole and Pumpkin Pie once a year, I often allow myself to (over) indulge.

I put my heart and soul into cooking the Thanksgiving meal, and in the days afterward the last place I want to be is in the kitchen. I know I’ll still have to eat, but I’m going to give myself a break with some easy, ultra-quick dinner recipes. These recipes take only 20 minutes from start to finish and use ingredients that I almost always have, like bread, eggs and tuna fish.

My fiancé, Colin, and I do tons of road-tripping during the holidays. To save time and money, we snack in the car rather than stop for a meal along the way. Gas stations don’t have many healthy options, and if we’re not careful we end up eating lots of junk food like candy, soda and salty chips.
