Don't substitute parsley for the cilantro, the dressing is a CILANTRO LIME vinaigrette! Not a parsley vinaigrette!
The cilantro imparts a strong flavor, and you have to love that herb, which I do!
This was wonderful over a black bean corn salad.
Excellent and easy!
