cooking dinner for a family with teen age boys that are coming and going at different times. I don't like to feel like a short order cook so need to make things that can reheat easily and are still healthy and tasty.
I am vegetarian, my fiance isn't.....now that's a challenge!
My husband's from India and a vegetarian and we are raising our 2 yr old daughter a vegetarian. I find it difficult to come up with creative recipes that meet his need/demand for spiciness (heat) while keeping it mild and somewhat simple still for our daughter. I also tire of making veg food all the time, would like to explore making fish and the very occasional meat dish (I did not grow up vegetarian though I respect and appreciate the principles and health benefits). It's difficult to be creative when I sometimes feel so limited with my ingredients.
It is the planning something different and not getting into a rut where we eat chicken or burgers every other night. Plus, my son is a year old and making sure he has something can be intimidating.
I would cook every night if someone would just tell me what to make. I hate deciding what's for dinner every night.
I eat out every day and trying to find healthy choices is just about impossible. I wish restaurants would have a few items for those of us who don't want to eat 2000 calories a meal. They don't even have healthy salads with low calorie dressings
I am a foster mom to 10 children and trying to find something that they all like is a challenge.
Planning for the week with seasonal, cost-effective, well-balanced, healthy and (most of all) vegetarian foods!
I only eat breakfast cereal ( BARE NAKED) it is just oats barley low fat, low carbs one of the different kinds has 14g of protein and low sugars, lots of nuts and cranberries!! I eat just a little more than 1/4 cup with 2 cups skim milk, sometimes I may have a banana or a small hand full of grapes. I don't get hungry again til around 8 or 9 PM. I NEVER eat fast food, never drink pop, never junk food.. The deal is I have multiple sclerosis and the only symptom is severe burning on the soles of both feet. So working out is hard for me. Over the past 10 mo.'s I have lost 30 pounds and I needed to!!! And that was without any exercising. The other problem with MS comes fatigue. Don't know when to stop sometimes and I will have to pay for it. I lived in Denver for 25 years (married & divorced) He left me one day, all with no discussion, he grabbed his stuff and was gone to go live in the basement of his parents. He was 41 years old. SORRY, I did not mean to get so carried away. Where I was going with that is I thought I needed to be near family. So I had 3 states to choose from, I went to Texas the worst place to go, as heat is the worst for people with MS so some times I don't get out for days!! So, do you have any suggestions for me???

Making recipes that watch the calories/fat/carbs for two. Mjost recipes are for large amounts.
My biggest dinner challenge is cooking dinner someone who's not watching their diet and wants unhealthy food.
Having the energy to make it.
MY MAIN CONCERN IS MONEY. I AM ON A VERY LIMITED BUDGET. THE SECOND CONCERN IS MY HEART. I JUST HAD OPEN HEART SURGERY AND NOW MUST CHANGE MY ENTIRE EATING PLAN. I HAVE BEEN FOLLOWING EATING WELL AND I FIND IT VERY HELPFUL. THANK YOU.
I love the weeks that I actually -sit down on Saturday-make a menu - make a shopping list and go to the market. Coming home after work knowing there is food in the fridge and a menu already chosenmakes life so much easier. I would pay someone to send me a weeks menu of seasonal, healthy meals with recipes and a well organized shopping list.
As a single person, I find it hard to devote a great deal of energy to a meal that I'll either make a small portion of or have to eat several times. Could you guys perhaps suggest some recipes that can have alterations made to the leftovers to spruce them up and make them different and enticing?
I am not employed right now money is very tight.I do like to eat a healthy varied diet.
Eating before 8pm. My husband gets home late, and I have to get the baby in bed around 7. I try to prep everything in advance so I just need 10 minutes or so to throw everything together in the end.
My schedule keeps me so busy that by the time I get home I am not motivated to cook, but I love to cook. I love experimenting with different flavors and color. Nothing makes me happier than hearing the comments from my husband and daughters and seeing them smile and their eyes light up! Just because of my cooking! However, by the time I've worked the entire day, picked the children up, drop them to their various activities, attend one meeting or the other, then pick the children up again, I am so tired, that I lack motivation to cook. If I had more time, I would be more motivated to cook. I always try to cook healthy whenever I cook!
Eating wouldn't be an issue if the small fry in the house would just eat what is being served instead of complaining about it or having two nibbles and trying to run off. the issues of a house with a 6 year old and a 2 year old.
I now live alone. I am diabetic and a stroke survivor, so it's not as much fun to cook as it used to be. But it helps to have somewhere to look for appropriate recipes.
My biggest challenge is having enough energy and not falling. I try to do most of the cutting and chopping and any prep work at the island on a stool.
My health has taken the fun out of cooking and baking.
Both of my sons play football and sometimes we don't get home until 8 o'clock at night, and I have to get up for work at 4:15am, so it's challenging to come up with something for dinner. Alot of times we get subs or pizza, but this is not healthly, so I just to remember to prepare crock pot recipes.
SUBSTUTIONS FOR ITEMS I DON'T HAVE, i.e.WINES, LIQUORS, HERBS
On the days I plan my meals, motivation is not a problem. But sometimes I feel myself lacking the motivation to carry out the plan. Sometimes, my hunger is greater than the time needed to make the meal. In those cases, a quick salad and carry out as much as the plan as possible!
cooking for one is a big problem when you are used to cooking for a family. Don't feel like cooking just for one person Me.

The most difficult part of dinner for myself and my husband is figuring out how to have fewer calories for me and more for my husband. I have one of those husbands that could eat meat and fast food every day and gain no weight, whereas I look at something unhealthy and gain weight.
Just cooking what is quick, but healthy.
Finding dinners to make in the heat waves where no cooking is involved because of no air-conditioning.
Motivation, plus cooking for one!!
Getting everyone's schedule coordinated to get to the table at the same time. The whole house will agree to a time to eat dinner, I do my best to have it ready at that time, however, usually something falls apart at the last minute and everyone is re-heating left overs. I do my best, but most of the time schedules just don't match up in a home with 2 working parents and teenaged children.
