Quick, Healthy Casseroles

Warm casseroles are the epitome of comfort food. We gave shepherd’s pie—usually made with lamb and potatoes—a facelift.

Our healthy Mini Shepherd's Pies recipe uses lean beef and creamy squash to cut fat and calories and boost vitamins and nutrients. We also added sautéed spinach for extra iron, calcium and folate. And another twist: these are individually portioned little pies (which helps keep the cooking time short).
