We took this yummy shot of Baked Mac & Cheese for the cover of our book, Comfort Foods Made Healthy. Mac-and-cheese didn’t end up on the cover (twice-baked stuffed potatoes won that spot) but it doesn’t change the fact that mac-and-cheese is an all-time crowd-pleaser. It’s the epitome of comfort food.

We are sensitive to wheat We enjoy macaroni and cheese with Tinkyada Brown Rice Pasta. It cooks like wheat pasta and tastes as good if not better.

This is wonderful looking and I love adding spinach to our dishes. I also add flax too and am glad to see you added "whole wheat" pasta! We use pasta made from an ancient grain called Kamut Khorasan Wheat and love it! Thanks for this recipe :)

How is this healthy?? 22g a fat per serving. almost 1000mg of sodium per serving.. Just because you add spinich to it doesn't make it healthy. That would be like me adding spinich to a big mac or a taco from taco bell.
