How to Make Healthy Homemade Ice Cream Recipes

The heat of summer always inspires me to get out my ice cream maker. (I use an affordable Cuisinart model that’s great.) Even though I love ice cream, I still want to make something that's healthy, so I make the lower-fat (but still rich-tasting) healthy Homemade Vanilla Ice Cream and Homemade Chocolate Ice Cream recipes that the EatingWell test kitchen developed. —Stacy Fraser, EatingWell Test Kitchen Manager

Ridiculous, I really don't fancy a condensed heart attack.

I think you are extremely mistaken to believe that adding a high sugar, processed product like condensed milk is healthier than natural whole milk. It is well known now that sugar is far more detrimental to our health than fats (with the exception of trans fats found in margarine and other processed goods). Fats from natural whole food sources such as whole milk are now proven to aid weight loss by providing a great source of energy and supporting the natural insulin response in the body. Please update your nutritional knowledge before spruiking 'healthy' recipes that will actually contribute to insulin resistance and diabetes.

I'm curious to know, please... how much and what type of gelatin did you use?... Would jelly-crystals work, or would sheets of gelatin be better? I've only just bought a 1.5 litre Cuisenart myself, and am looking forward to more experimentation :)

I make my own home made ice cream using coconut milk. But I mix it half light coconut milk and half regular coconut milk and use stevia for the sweetner then I add in whatever healthy stir in that I want to add.And it tastes yummy, but alot healthier version.

I make a quick low fat/low cal. ice cream by making two pkgs.of sugar free pudding,(minus 1 cup of the low fat milk),and mixing in a regular size container of light whipped topping.Freeze.Yum!
