How to Make Healthy Homemade Ice Cream Recipes

The heat of summer always inspires me to get out my ice cream maker. (I use an affordable Cuisinart model that’s great.) Even though I love ice cream, I still want to make something that's healthy, so I make the lower-fat (but still rich-tasting) healthy Homemade Vanilla Ice Cream and Homemade Chocolate Ice Cream recipes that the EatingWell test kitchen developed. —Stacy Fraser, EatingWell Test Kitchen Manager

I use the fat free half & half and 2% milk with the low-fat or fat free sweetened condensed milk. Makes a really creamy ice cream.

What about "ice cream" made w/soy,hemp,almond, or rice milk. Sweetened w/ xylitol, or Stevia, and maybe coco powder, organic cherries, nuts, etc. Something for people who want low to moderate glycemic index desserts etc.

I make a quick low fat/low cal. ice cream by making two pkgs.of sugar free pudding,(minus 1 cup of the low fat milk),and mixing in a regular size container of light whipped topping.Freeze.Yum!

I make my own home made ice cream using coconut milk. But I mix it half light coconut milk and half regular coconut milk and use stevia for the sweetner then I add in whatever healthy stir in that I want to add.And it tastes yummy, but alot healthier version.

I'm curious to know, please... how much and what type of gelatin did you use?... Would jelly-crystals work, or would sheets of gelatin be better? I've only just bought a 1.5 litre Cuisenart myself, and am looking forward to more experimentation :)

i think you are very foolish, fresh whole milk is far superior to sweetened condensed milk

& egg yolks are full of vitamins

i think mine is the healthier option of the two,,, John
