This just doesn't seem "healthier." I am a little disappointed - EatingWell is normally my go-to, but not for this recipe!

Low fat or "lighter" doesn't mean healthier...using canola oil/GMOs and low fat ice creams which typically have chemicals or other man made sugars take any "health" out of this recipe.

I made this last week for myself and my boyfriend. It was fabulous!! The spice of the ginger snaps really added a ton of flavor, and I added a good bit of cinnamon to the filling when I mixed it up. Granted, this isn't really anything like pumpkin pie, but it was a great lower fat dessert and my boyfriend ate it all up without suspecting that it was healthier than regular pumpkin pie!
