I did a quick Google search for “grilled cheese” and the first recipe I saw called for “2 slices cheese, 2 slices white bread and 2 tablespoons butter.” That’s for one sandwich. A seemingly innocent sandwich like a plain old grilled cheese is apparently not so innocent anymore. By Jessie Price

You can also make a toasted, as in under the broiler or in a toaster oven, cheese sandwich. No extra fat required to cook it. I find its best if you lightly toast the bread first then add the cheese, the sandwich holds up better. The cheese gets bubbly, and tastes even better when the tops of the bubblys brown.
My fave is toasted montery jack sandwich with a sprinkle of feta and pepper sliced tomates, or roasted red peppers. Mmmmmm.....sooo comforting!

I just put some good whole wheat in the toaster, then a low fat cheese slice between them, 25 seconds in the microwave and we're done. And the kids LOVE them. I wonder if they will balk at the veggies...

I don't know about this with the veggies in it. On the very rare, once or twice a year I might crave a grilled cheese, I want the comfort food version that I ate as a kid with white bread, butter, and fattening cheese slices. I am always starving and eating low fat so if I'm giving in to a grilled cheese craving I am going to eat the real thing!

It's new to me that people put butter on grilled cheese. At our house we make them open-faced on whole wheat bread with a sprinkle of parmesan and fresh-ground pepper on the cheese. Put them on a baking sheet and "grill" them in the oven. No added fat beyond the content of the cheese.
