I hate vegetables!!!! But I am trying to change that slowly. After seeing this article I just made some spaghetti and meat sauce with fresh pumpkin. I diced the pumpkin with the skin on and boiled it till it was soft. When I put the Ragu in the blender, I put the pumpkin in it and blended it till it was smooth. You could barely see the green bits of skin. I added that to my seasoned, browned, ground beef and simmered and bam! It was delicious. I kept saying I can't believe pumpkin (skin on) is in this! Can't wait to find more ways to sneak veggies into my food. — Anonymous |
