Thanks for the recipe but may I suggest that boiling for 10 to 20 minutes will result in a very overcooked white asparagus with much of its' flavor lost into the boiling water. I would propose either to braise or roast the asparagus as both methods retain all of the asparagus flavor and give better control over texture.

To braise, peel white asparagus as above then place in a pan with 100 ml water, a knob of butter and a pinch of sea salt. Cook covered on medium heat until the tip of paring knife easily pierces the asparagus. At that time remove the lid and reduce the liquid to a glaze. The result is a better taste and texture.
